  2. Be patient and repeat if needed. Top up the warm water as it cools rather than cranking up the heat. Slow and gentle keeps the honey’s natural goodness intact.
  3. Avoid the microwave. Microwaving heats unevenly and quickly overshoots the safe temperature, scorching the aromas and driving off the qualities you paid for. It is best left alone for good honey.

How to Store Honey to Slow Crystallisation

You cannot stop crystallisation forever – nor should you want to – but you can slow it down. Keep honey in a sealed jar at a steady room temperature, ideally around 20 to 25°C, away from the fridge. Does crystallisation mean my honey is fake or has added sugar?
