Honey-Harissa Salmon Traybake: The 25-Minute Sweet-and-Spicy Dinner Where the Glaze Is the Whole Dish

7 Min. Lesezeit

Honey-harissa glazed salmon fillets on a baking tray with lemon, thyme and a drizzle of olive oil

There is a moment, about twenty minutes into this traybake, when the kitchen fills with the smell of honey caramelising against warm spice and you realise dinner is basically done. Honey-harissa salmon is the kind of recipe that feels far more impressive than the effort it asks for: one tray, one hot oven, and a glaze that turns a plain fillet into something sticky, glossy and genuinely memorable. And here is the honest truth about this dish – it lives and dies by the honey. Use a thin, over-processed supermarket syrup and the glaze tastes flat and one-note. Use a real, aromatic Greek thyme honey and the whole tray comes alive. Reach for a jar of our Greek Thyme Honey and you will taste the difference from the very first forkful.

Why this traybake earns a place in your weeknight rotation

Salmon is forgiving, fast and rich enough to stand up to bold flavours – which makes it the perfect partner for the sweet heat of a honey-harissa glaze. Harissa brings smoky, gently fiery depth; lemon cuts through the richness; and thyme honey does the heavy lifting, balancing the spice with a floral, peppery sweetness and giving you that irresistible lacquered finish. It is ready in about 25 minutes, needs almost no washing up, and works just as well for a quiet Tuesday as it does when friends drop by. Best of all, it is endlessly adaptable: dial the harissa up or down, swap the salmon for chicken thighs, or scatter the tray with olives and tomatoes to make it a full one-pan meal.

The one ingredient that makes or breaks it

If you take one thing from this recipe, let it be this: the glaze is only as good as the honey you build it from. Our Thyme Honey from Greece is gathered from wild, sun-drenched thyme fields and hand-spun entirely without heat, so it keeps its natural enzymes and that deep, captivating Mediterranean aroma. It is pure and unadulterated – nothing added, nothing watered down – which is exactly why it performs so beautifully as a savoury glaze: it clings, caramelises and carries real flavour rather than just sugar. A supermarket squeezy bottle simply cannot do this. If you want the glaze to taste unforgettable instead of merely sweet, start with better honey. Secure a jar of our Thyme Honey here and keep it on hand – you will reach for it far beyond this one dish.

Ingredients (serves 4)

Everything here is a cupboard or counter staple, with two heroes doing the real work – the honey and the oil.

  • 4 salmon fillets (about 150–180 g each), skin on
  • 3 tbsp Greek Thyme Honey
  • 2 tbsp extra virgin olive oil from the Peloponnese, plus a little more for drizzling
  • 1–2 tbsp rose harissa paste (to taste)
  • 2 cloves garlic, finely grated
  • 1 lemon – juice of half, the rest cut into wedges
  • 250 g cherry tomatoes on the vine
  • Sea salt and freshly ground black pepper
  • A handful of fresh thyme or parsley, to finish

A quick note on the oil: a traybake gets hot, so you want an oil that can take the heat without turning bitter. Our Peloponnese extra virgin olive oil is lab-tested, low in acidity and stays stable up to 180°C, which makes it ideal here. Stock up on our extra virgin olive oil so you always have the good stuff within reach.

Method

  1. Heat the oven. Preheat to 200°C (fan 180°C) and line a large baking tray with paper.
  2. Make the glaze. In a small bowl, whisk together the thyme honey, 1 tablespoon of the olive oil, the harissa, grated garlic, lemon juice and a good pinch of salt. Taste it – it should be sweet, smoky and bright. Adjust the harissa to your heat preference.
  3. Dress the tray. Scatter the cherry tomatoes over the tray, drizzle with the remaining tablespoon of olive oil and season. Nestle the salmon fillets in among them, skin-side down.
  4. Glaze generously. Spoon the honey-harissa glaze over each fillet, making sure every piece is well coated. Don’t be shy – this is where the magic happens.
  5. Roast. Bake for 12–15 minutes, until the salmon is just cooked through and the glaze is sticky and lightly caramelised at the edges. For extra colour, flash it under a hot grill for the final 1–2 minutes.
  6. Finish. Drizzle with a little more olive oil, scatter over the fresh herbs and serve with the lemon wedges and the burst tomatoes alongside.

Tips, swaps and make-it-your-own

Prefer chicken? Thigh fillets work beautifully – just extend the roasting time to 25–30 minutes. Want a full one-pan dinner? Add a tin of drained chickpeas or some sliced courgette to the tray at the start. For a sharper finish, a spoonful of the glaze whisked with extra lemon makes a lovely drizzle at the table. And if you like a little salty-briny contrast against the sweet glaze, a handful of Greek green olives scattered over the finished tray is superb – our naturally fermented Greek green olives add exactly the right savoury lift.

What to serve with it

This traybake is happy with almost anything simple: fluffy couscous, warm flatbreads, a lemony rocket salad or plain rice to soak up the glaze. A final drizzle of good olive oil over the greens ties the whole plate together – another reason a bottle of proper extra virgin earns its place on your worktop.

Frequently asked questions

Can I use ordinary honey instead of thyme honey?

You can, but you will notice the difference. Mass-market honey is often heated and blended, which strips out aroma and leaves a flat sweetness. A pure, unheated thyme honey carries a floral, peppery depth that balances the harissa and gives the glaze its character. It is genuinely the ingredient that lifts this dish from good to unforgettable.

Is thyme honey only for sweet dishes?

Not at all. Its savoury-glazing ability is one of its best qualities – brilliant over salmon, chicken or roasted vegetables, drizzled on cheese, or stirred into dressings. Once you have a jar open, you will find endless uses beyond the honey jar’s usual spot at breakfast.

Can I cook salmon in extra virgin olive oil at this temperature?

Yes. A good extra virgin olive oil is more heat-stable than many people assume. Our Peloponnese oil is lab-tested and stays stable up to 180°C without forming trans fats, so it is well suited to a 200°C traybake where the salmon itself only needs a short burst of heat.

The difference is in the details

A weeknight dinner this easy has no right to taste this good – and the secret really is in two things you drizzle, not the thing you roast. Real Greek thyme honey and a proper extra virgin olive oil are what turn a quick salmon traybake into something you will make again and again. Treat yourself to both, and taste what we mean by Pour La Vie. Order your Thyme Honey today and make your next dinner unforgettable.
