Walk down any supermarket aisle and every bottle claims to be “extra virgin”, “cold pressed” and “premium”. Yet the oils behind those labels can be worlds apart. If you want to understand what actually separates a genuinely good olive oil from a forgettable one, two words are worth learning: polyphenols and acidity. Get to grips with these, and you will read an olive oil far better than any marketing on the front of the bottle.

What are polyphenols in olive oil?

Polyphenols are natural plant compounds found in the olive fruit and its leaves. When olives are milled into oil, a share of these compounds — with names such as oleocanthal, oleuropein and hydroxytyrosol — carries through into the liquid. They are antioxidants, which means they help protect the oil itself from going rancid, and they are largely responsible for the lively, peppery character of a fresh extra virgin.

Crucially, polyphenols are also the part of olive oil that has drawn the most scientific interest. Under EU rules, olive oils that naturally contain at least 5 mg of hydroxytyrosol and related compounds per 20 g may carry an authorised statement that these polyphenols contribute to the protection of blood lipids from oxidative stress. That is a regulated, carefully worded claim rather than a cure-all promise — but it tells you that the polyphenol content of an oil is a meaningful quality marker, not just marketing language.

How polyphenols end up in the bottle

Not every olive oil is rich in polyphenols, and the difference comes down to how the oil is made. Three things matter most.

When the olives are picked

Olives harvested earlier in the season, while still green or just turning, contain far more polyphenols than fully ripe black olives picked late. Early-harvest oils give a lower yield — the grower gets less oil per tree — but the oil is greener, more robust and more peppery. It is a deliberate choice in favour of quality over quantity.

How they are pressed

Polyphenols are fragile. Heat and time destroy them, which is why genuine extra virgin oil is extracted mechanically, without heat — the process often described as “cold extraction”. Oils that are refined, deodorised or produced with heat lose most of their polyphenols along the way, which is part of why they taste flat.

How quickly they are milled

The clock starts ticking the moment olives leave the tree. The best oils are pressed within hours of harvest, before the fruit can begin to ferment or oxidise. The peppery throat-catch is a good sign

Here is a simple test you can do at home. Take a teaspoon of a good extra virgin olive oil on its own. You should notice three things: a fruitiness on the nose, a gentle bitterness across the tongue, and — a moment later — a peppery tickle at the back of the throat that can make you cough.

That catch is not a fault. It is caused directly by oleocanthal, one of the very polyphenols we have been talking about, and tasters treat it as a hallmark of a fresh, high-polyphenol oil. A bland, buttery oil with no bitterness and no pepper may be perfectly pleasant, but it is almost certainly lower in polyphenols. Once you have felt that peppery finish, you will start to seek it out.

What “acidity” actually means

Acidity is the other number worth understanding — and it is widely misunderstood. The free acidity of an olive oil is not something you can taste, and it has nothing to do with sourness. It is a laboratory measure of how much the oil’s fats have broken down into free fatty acids, expressed as a percentage.

To be classified as extra virgin, an oil must have a free acidity of no more than 0.8%. The best oils come in well below that. A low figure signals healthy fruit, careful handling and prompt pressing; a higher figure points to damaged or overripe olives, or a slow, careless process. So when a producer is happy to publish a low acidity result — ours is laboratory-tested for exactly this — it is a genuine sign of quality, whereas a bottle that tells you nothing at all is asking you to take it on trust.

How to choose a high-quality olive oil

Bringing it together, here is what to look for on the shelf and on the label:

  • A harvest date, not just a best-before date. Polyphenols fade with time. An oil from the most recent harvest will be livelier than one pressed two years ago.
  • A dark glass bottle or tin. Light degrades olive oil quickly, so quality producers protect it from the start. Be wary of oil sold in clear bottles under bright shop lighting.
  • A stated origin. A single, named region — such as the Peloponnese — tells you more than a vague blend of oils from several countries.
  • Published acidity, and ideally polyphenol information. Producers who test their oil and share the results have nothing to hide.
  • That peppery finish. If you can taste it before you buy, trust your throat.

How to keep polyphenols in your oil

A high-polyphenol oil is worth protecting once it is yours, because the same compounds that make it good also fade with time, light, heat and air. Keep the bottle in a cool, dark cupboard rather than next to the hob or on a sunny windowsill. Keep the cap on tightly between uses to limit contact with air. And buy a size you will finish within a few months of opening rather than a large tin that sits half-used for a year. Treated well, a good oil rewards you right down to the last pour.

Does a high-polyphenol olive oil taste better?

It tastes more alive — greener, more peppery, with more character. Whether that is “better” depends on the dish and your palate: a robust, high-polyphenol oil is glorious drizzled raw over salads, soups and grilled vegetables, while a milder oil can suit delicate baking. For everyday Mediterranean cooking, most people come to prefer the livelier style once they are used to it.

Can I cook with high-polyphenol olive oil, or should I save it for drizzling?

You can absolutely cook with it. Extra virgin olive oil is well suited to everyday frying, roasting and sautéing at moderate temperatures, and it is a mainstay of Greek home cooking. You will lose some of the most delicate aromas to the heat, so it is also worth keeping a little back to add raw at the end, where its polyphenols and flavour come through most clearly.

Is cloudy, unfiltered olive oil higher in polyphenols?

Unfiltered oil retains tiny fragments of olive fruit and water in suspension, which is why it looks cloudy and often tastes fuller and more peppery when fresh. It can carry a little more polyphenol character than a heavily filtered oil. The trade-off is that it is best enjoyed while young, which is all the more reason to buy from a recent harvest and use it steadily.
